We don’t usually find spinach and quinoa in Jamaica. Is there a substitute I can use?

I love your news letter. But now I just discovered that my youngest daughter has ulcerated colitis. It’s was bad she almost died. We need to find a good diet for her, she’s 20 years old is 5 feet 7 inches and weighs 104 pounds. She anaemic because she lost a lot of blood and she couldn’t keep anything down. She’s in the hospital since Thursday and will not come out until she is better. We were lucky because I work for a wonderful cardiologist that got involve in her case and it’s thanks to her that they found out what she as. If you can could you tell me the best food she could eat so she can lead a normal life. She was very active before she got sick, and she can’t wait to get back to her kung fu and karate lessons. Thank you so much if you can help us.

I love this recipe of quinoa with lemon and herbs by Giada found on the food network site
Looks delicious Paula,
I would substitute coconut oil for the olive oil though. Love these types of salads to make ahead of time so you always have something healthy on hand.
Have you ever thought about publishing an e-book or guest authoring
on other websites? I have a blog based on the same subjects
you discuss and would love to have you share some stories/information.
I know my subscribers would enjoy your work. If you’re even
remotely interested, feel free to shoot
me an e mail.
